Meatloaf

So my husband is a very meat and potatoes kind of guy. I’m Italian and not meat and potatoes. I remember the first time I made him a meatloaf my husband told me it tasted like a meatball more than a meatloaf. After 12 years together I think I have perfected my recipe and come to find out our 2 children LOVE meatloaf too.

So now that I’m the odd ball out I end up making meatloaf more because my family goes crazy over it.

Orange Peel Chicken

We usually have Sunday dinner at my parents house every week. This week they were staying with friends for the weekend and would be back in time for dinner but not to cook it. So everyone was going to come to my house instead. This wasn’t the first time everyone was coming over for dinner but this was the first time trying this recipe.

Hide the Veggie Hamburgers!

I’m sure all kids go through this phase… You hear about it everywhere. The Veggie Stand Off! My son, Nicholas is 3 1/2 years old. I use to never have a problem getting him to eat his veggies but the last few months it has been almost impossible.
I tried everything! I only made his favorites, started making smoothies but nothing really worked.

Then one day I saw something on TV about taking roasted veggies, chopping them up and adding them to a meatloaf. Then it hit me- I could make hamburgers that were gluten and casein free for my daughter and packed full of hidden veggies for my son! It was brilliant!!! Continue reading

Chicken and Kale with Potatoes!

Kale… You hear it everywhere. It is suppose to be a super food. So a few months ago I was wandering around the produce department at my local grocery store and decided to go take a look at it.
I found a very hearty green that was pretty cheep. So even though I had no idea what to do with it or how to cook it I picked up a bunch.

I came home and started looking around the Internet for different ways to cook it and what it went well with.

There is nothing better than roasted veggies! It’s simple and you can use whatever you like!

Carrots, squash, broccoli, potatoes, sweet potatoes, onions, mushrooms, brussel sprouts, eggplant, asparagus, zucchini, peppers, green beans, corn, whatever you can think of!

It all works!
