Meatloaf

So my husband is a very meat and potatoes kind of guy. I’m Italian and not meat and potatoes. I remember the first time I made him a meatloaf my husband told me it tasted like a meatball more than a meatloaf. After 12 years together I think I have perfected my recipe and come to find out our 2 children LOVE meatloaf too.

So now that I’m the odd ball out I end up making meatloaf more because my family goes crazy over it.

Fresh Gluten Free Zucchini Bread

Vanilla Chocolate Chip Meringues

Our GFCF cookie jar was empty and again I was looking for a cookie that not only my daughter and I could enjoy but also the whole family.

I remembered I had a container of egg whites in the fridge from a recipe I had made the week before.

Peanut Butter & Jelly Cookies

My neighbor makes home-made strawberry jam. Let me tell you it is absolutely AMAZING!!! This year he was kind enough to give me a container of it. 🙂

Since they were so sweet to share I decided to make them some cookies in appreciation.

I had been wanting to make peanut butter cookies that my daughter and I could eat (Gluten and Casein Free) so I decided to make a double batch.

Even better than peanut butter cookies I decided to use some of the fresh strawberry jam to make peanut butter and jelly cookies!

Sweet Incredible Banana Bread- Gluten Free

I was walking through my kitchen and noticed I had 3 very ripe banana’s in the fruit basket.
The first thing that popped in my head was banana bread! Oh how I missed banana bread- I hadn’t had any since I went gluten free 3 years ago.

Strawberry Coconut Cream Cake
