If you are looking for a light, flavorful, healthy and easy meal then this is perfect for you!
It only takes 10 minutes and just a few ingredients and you too can be sitting down to this.
First things first…
You will need (For 2-3 people)
1 pound Sea Scallops (Fresh or Frozen it doesn’t matter- if frozen thaw)
1 package of baby arugula
1 cup of cherry tomatoes cut in 1/2
4-6 cloves of garlic- chopped
4 tablespoons of extra virgin olive oil- divided
2 tablespoons of lemon juice
1/4 teaspoon of crushed red pepper flakes (optional)
Old Bay seasoning
Take your scallops and place them between a few sheets of paper towel to pull any extra moisture away. Don’t forget to flip them or add paper towel to the top and lightly press down.
In a pan add 3 tablespoons of extra virgin olive oil, garlic and tomatoes.
Cook over medium- medium/high heat until tomatoes start to soften. About 3-4 minutes.
Add 2 tablespoons of lemon juice and if you choose red pepper flakes and continue to heat for another minute.
Remove pan from heat and add in arugula and toss well.
Divide among plates.
In a second pan heat remaining 1 tablespoon of oil and sear scallops over medium/high heat. About 3 minutes per side.
