Orange Peel Chicken

We usually have Sunday dinner at my parents house every week. This week they were staying with friends for the weekend and would be back in time for dinner but not to cook it. So everyone was going to come to my house instead. This wasn’t the first time everyone was coming over for dinner but this was the first time trying this recipe.

I originally found an orange peel shrimp recipe on Pinterest and adapted my recipe from that.

Chicken and Kale with Potatoes!

Kale… You hear it everywhere. It is suppose to be a super food. So a few months ago I was wandering around the produce department at my local grocery store and decided to go take a look at it.
I found a very hearty green that was pretty cheep. So even though I had no idea what to do with it or how to cook it I picked up a bunch.

I came home and started looking around the Internet for different ways to cook it and what it went well with.

Spinach & Ricotta Polenta Cakes

Polenta is pretty much a staple in most Italian homes- even more so in Gluten Intolerant Italian homes.

I love Polenta. There are so many things you can do with it! I always keep 2 kinds of cornmeal in my house for polenta. Fine and coarse grain.

Does it matter what type you use depending on what you are doing? Not really… I tend to use the fine grain if I’m looking for a more of a creamy consistency and the coarse if I’m looking for it to set up to be sliced and fried but either kind will work no matter what you are making.

In my last post I said how I was making the Coconut Dream Bars for a get together I was going too, well these Polenta cakes will also be joining the party.

Italian Sausage with Zucchini and Tomatoes

Sausage with Zucchini and Tomatoes I love to cook, but I was finding it difficult to find recipes that were both Gluten and Casein free that my kids would actually eat. While searching the web and the app store on my phone hoping to find something to point me in the right direction I stumbled onto the Whole Foods Recipes app! I fell in love. It let me search according to our dietary restrictions, pull recipes that I liked and even compiled a grocery list for me.

We tried the first recipe tonight and it was a BIG hit!
