Chicken and Kale with Potatoes!

Kale… You hear it everywhere. It is suppose to be a super food. So a few months ago I was wandering around the produce department at my local grocery store and decided to go take a look at it.
I found a very hearty green that was pretty cheep. So even though I had no idea what to do with it or how to cook it I picked up a bunch.

I came home and started looking around the Internet for different ways to cook it and what it went well with.

There is nothing better than roasted veggies! It’s simple and you can use whatever you like!

Carrots, squash, broccoli, potatoes, sweet potatoes, onions, mushrooms, brussel sprouts, eggplant, asparagus, zucchini, peppers, green beans, corn, whatever you can think of!

I know a lot of people hear Brussel sprouts and run for the hills but they are so yummy and so good for you!

No matter if you have always loved, only tried a few times or never tried Brussel sprouts you need to give this a try.

You have probably figured out that even though I love to cook I’m really into things that are easy! Hey I have 2 young kids and trying to get dinner going and on the table by the time my Husband gets home from work is not always the easiest thing in the world. It is actually usually more of a battle. So I try to do things that have steps that take no more than 5 mins so I can walk away at any time, but are still packed full of flavor!

Crock Pot -Santa Fe Chicken

Days like today I’m grateful for my crock pot.

My daughter wasn’t feeling well and just wanted to cuddle all day and my son had a late doctors appointment. I knew there was no way I was going to be able to cook dinner.
Crock Pot dinners are great. Throw ingredients in early in the morning and sit down to a great dinner in the evening.

I found this recipe for Santa Fe Chicken in the crock pot on Pinterest and it was terrible! The recipe called for too much liquid, way too long cooking time and it was bland. So I took the basic idea and made it something yummy that anyone would love to sit down to.
