Here is great dinner option that is not only yummy but also lower in calories and looks great!
You need 4-6 boneless skinless chicken breast 1/2’s
1/2 package of cream cheese (I use light)
About 1/4 cup of sun dried tomatoes- a little more a little less, it all works
1 tablespoon of garlic powder + extra for topping
1/2 tablespoon of onion powder
A bunch of asparagus
Crushed red pepper flakes (optional)
Egg wash (optional)
1/2 cup italian bread crumbs (optional)
You want to start with pounding out your chicken- I used boneless skinless breast 1/2’s.
In a small bowl mix cream cheese, sun dried tomatoes chopped, garlic and onion powder and mix well.
Spread about 1-2 tablespoons of mixture on chicken.
Grab handful of trimmed asparagus place on chicken and cream cheese and roll up.
For gluten free that is it!
Place in a dish seam down and sprinkle with garlic powder and red pepper flakes.
If you are looking for a bit more- You can take the chicken roll and dip in egg wash than roll into Italian bread crumbs. (I did that for my Husband and Son)
Bake uncovered for about 30mins at 425. I gave my baking dishes a quick spray with cooking spray so I wouldn’t have a problem with anything sticking when I tried to move them to a serving dish.
Let rest for 3-5 mins before serving/cutting to let the cream cheese thicken back up.
