We usually have Sunday dinner at my parents house every week. This week they were staying with friends for the weekend and would be back in time for dinner but not to cook it. So everyone was going to come to my house instead. This wasn’t the first time everyone was coming over for dinner but this was the first time trying this recipe.
I originally found an orange peel shrimp recipe on Pinterest and adapted my recipe from that.
It was delicious!
Here is what you will need:
For 6 people
3 pounds of boneless skinless chicken breasts cut into bite size pieces
1/4-1/3 cup corn starch
8-10 cloves of garlic minced
10 green onions chopped (greens and whites)- divided 8 for cooking 2 for garnish
1 cup Gluten Free Soy sauce
3 large oranges zest and juiced
3/4 cup orange marmalade
1/2 teaspoon red pepper flakes
5 tablespoons vegetable oil- divided
Pat chicken pieces dry with paper towel and coat in corn starch- set aside
In a pan heat 2 tablespoons of oil. When hot add garlic, 8 green onions, orange zest and red pepper flakes. Cook until onions start to wilt.
Once thickened remove from heat.
Transfer to serving dish and top with remaining green onions.
Serve with brown rice.
