Pumpkin Spice Bread- Gluten Free!!!

Well after almost a year off all I can say is life got in the way…

Nicholas and Giada are both in preschool part time and we are expecting #3 in a few short months.

I was looking through the pantry and came across a large can without a label on it. I remembered that last year during the holidays my daughter peeled the label off of a can of pumpkin and all of a sudden I had a craving for Pumpkin Spice Bread- you know how those pregnancy cravings work. So I grabbed the unlabeled can and opened it hoping to find pumpkin.

Thank goodness! It was pumpkin 🙂

Now it was time to come up with a recipe to make a gluten free and dairy free pumpkin bread.

I have said in many posts that gluten free baking doesn’t have to be hard. There is no need to fumble around with multiple types of flours. If you find a recipe that calls for a bunch of different flours just close it- there is a better way!!!

I grabbed a loaf pan and pre heated the oven to 350 degree F.

This is what I came up with.

Here is what you’ll need…

Ingredients:

1 & 1/2 cups of pumpkin puree
1/2 cup sugar
1/4 cup brown sugar
1 egg
2 tsp. vanilla
2 cups all purpose Gluten free flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. baking soda
1/4 tsp. salt
2 1/2 Tbsp. almond milk

Plus (for topping)
1/2 tsp. cinnamon
2 Tbsp. sugar

In a large bowl mix together all ingredients.
For topping mix together additional cinnamon and sugar in dish and set aside.

Spray loaf pan with non stick spray.

Pour the batter in the pan. The batter will be very thick!
Take the additional cinnamon sugar and sprinkle over the top.

Into a 350 degree oven it goes for 55 minutes or until a toothpick inserted comes out clean.

The house started smelling great within 10 mins of it being in the oven!!!

Let cool in pan for about 15 minutes then lift out and place on a cooling rack.
Now you can wait until it is completely cooled or you can dig in!

It is amazing! A fantastic Gluten Free, Dairy/Casein free Pumpkin Spice Bread that is soft, fluffy and not crumbly like a lot of other GF products.

A little knowledge for you…

Amazingly STRONG!
Most people think a colonoscopy is just some pain in the butt (literally) test that you have to do once you turn 50.
The truth is that is can save your life! Most do not know that colon cancer is the second leading cause of cancer death in the US.
Regular screenings are your best chances to protect yourself.
If you do not have a family history make sure to start your screenings right at age 50 unless your doctor recommends earlier.
For people like me with a large family history of colon cancer follow your doctors recommendations on what age to start your screenings.
I am only 30 and had my 1st screening yesterday. I want everyone to know there is nothing scary or painful about this procedure. It is also outpatient. So don’t let your fear of the test stop you from getting screened. Gladly my test came back fine! I will continue to get screenings as my Dr. recommends every 5 years.

So, I have almost finished my third chemo treatment…I am currently hooked up to my pump of poison and will get disconnected on Wednesday. I am happy to report that I still have my hair! I told my doctor that I still have to shave my legs, so I am taking that as a good sign that my hair is still growing!

I am 3 weeks into this crazy journey and I have decided to combine a holistic/natural treatment with my chemotherapy. While I am participating in genetic counseling and testing and believe there may be a connection, I strongly believe that environmental factors played a role in my early development of colon cancer. The holistic/natural treatment is more of a lifestyle change that will continue to strengthen my body, mind, and spirit as well as help prevent any reoccurrence of this or any cancer.

Meatloaf

So my husband is a very meat and potatoes kind of guy. I’m Italian and not meat and potatoes. I remember the first time I made him a meatloaf my husband told me it tasted like a meatball more than a meatloaf. After 12 years together I think I have perfected my recipe and come to find out our 2 children LOVE meatloaf too.

Fresh Gluten Free Zucchini Bread

Vanilla Chocolate Chip Meringues
