Here is another great recipe. It is very versatile because you can change and substitute the ingredients however you need based on your dietary restrictions.
Ingredients: 1 1/2 cups of Flour
2 cups packed Brown Sugar divided
1/2 cup butter or margarine
1 teaspoon Baking Powder
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups Sweetened Coconut flakes
1/4 cup chocolate chips (optional)
Pre heat oven to 350 degrees
Combine flour, 1/2 cup brown sugar and butter until well mixed and particles are fine.
For Gluten Free use your favorite GF all purpose flour. I like Gluten Free Pantry. For Dairy/casein Free use a butter substitute. I used Earth Balance Original.
Press into bottom of ungreased 9″x 13″ pan. Bake for 15 minutes at 350.
Mix 1 1/2 cups brown sugar with eggs just until blended. Mix in baking powder, vanilla, salt, coconut flakes and chocolate chips until combined. (I used Enjoy Life’s mini chocolate chips to keep it dairy free)
Spread over partially baked crust and bake another 20-25 minutes, or until golden brown.
When completely cooled, cut with a sharp knife.
These smell like the samoa Girl Scout cookies- YUM!!!!
You can also wrap bars individually and freeze. This is nice so you can pull out 1 at a time when you are having a sweet craving.
